I don't think it's been mentioned yet, but I wanted to add that pressing "I" changes the canvas size when you're trying to capture the subject, allowing you to paint portraits and still-life paintings of any size.  Painting large portraits is your best bet.  My artistic, level 10 sim easily earns 3000-5000 per portrait.
