I do with the Wolff family same as all the other families in my game.  Delete the female Sims and make the males gay.

I don't bother to delete females.  I just use "editsim" and switch their gender.

As for the Wolffs, I've yet to play them (or most of the other pre-mades for that matter) but I'll give them a shot next time.

Inge's sidewinder and half-landing stairs.  I used those almost exclusively in TS2.

I've had that happen a few times.  Yesterday I was making a starter(ish) home priced just shy of 16k.  In the Edit Town view it was around $1200 cheaper.  I don't know why, but since it was cheaper I didn't really care.

For me, Brandi's pregnancy token was pointing to character $D0 as the father which didn't exist at all, so, I redirected it to Cyd Roseland.  The baby came out just fine but boy was Cyd surprised.   Wink

Oh yes, there are plenty of hillbilly-type small towns that dot the Sierras in California.  A Three-Lakes hood set around Yosemite or Sequoia Parks would work just fine.
