NPC that control OFB Shop ?

Is it working properly when you leave the shop owned by the playable?
If it is, don't sell the shop - either get a manager and BRY and just check in with it every once in awhile or just don't ever play that sim again, pretend he's an NPC there just to own shops.
If it isn't, something else is wrong. I had a bakery and did get it working but it's been awhile and I don't remember that much about it. I do remember having problems selling single servings, rather than full pies.

I tried a shop like this once selling fish and garden veggies. You just can't do it, because the inventory that's sold has to come from somewhere. It's not just something you buy out of the catalog. If you sell the business back to the community, none of the stuff can be bought there.
You can have your Sim purchase the shop and set it up, then never go in, but eventually he'll run out of inventory and have to restock. Whether it's growing apples and eggplants, or baking cakes or crafting snapdragons, someone's gonna have to make more.

I've set up a playable owned shop a couple times and it sells the craftable toys and flowers and once I take the owner there and get it all set up, I never let her return and it never needs restocking. If I take another playable there the stuff will get the restock sign but leaving resets them so when the next playable goes there everything is fully stocked again.

Agreed. What happens is that the restockable merchandise comes out of the owner's inventory...until the owner runs out. However, Community Lots restore to their last saved state whenever you visit them. On an owned community lot, this means the last time you played the owner and had him leave the lot..
So even if the owner runs out of items due to restocking while you're visiting the lot as a Neighbor, you can leave the lot and come right back, and find all the shelves stocked again.
Until I started building factories, I'd use the above trick quite often with crafted item stores.

I'm almost certain my owner was running out of snapdragons at one time. When she left the lot, there were no out-of-inventory signs at all. Some playable Sims went to buy snapdragons, I seem to remember her inventory going down. I definitely remember her going to the shop and having a bunch of out-of-inventory signs.
Before the Seasons patch, some items were unsellable in stores if they weren't owned by a Sim, including veggies. If a Sim owned the lot, veggies could be sold, but I believe the ladybug loft and compost bin could not. Also, before the patch you couldn't put a compost bin in your inventory. I haven't done much testing of this since the patch.
