Do you currently have all store sets or only what you like best?

I download everything, even if I have no plans to use it at the time, because you never know what might be handy later on. For example, the Viva Las Vegas stuff is some of the gaudiest shit they've produced yet, but then it became thematically appropriate when they released the casino. The Katy Perry's Butthole SP was the nadir of their SPs so far, but even it has some stuff that's nice for children, such as their playground equipment.
As far as stuff I use a lot, I love the Ultra Lounge and Bayside sets for their clean lines and modernity, but I also really like the Faire Folk set. It's intended to be Faffy Elf Shit, but the less fanciful pieces look really good in a lot of different settings, and the fence and gate look particularly good when used to fence off a garden. I also like the Steampunk sets when I'm playing an inventor Sim.

I have to have every single thing. Everything is installed in my game as well as backups on a different drive. I just organized it all yesterday in fact. Tidy and delicious.
As for what I use the most, pretty much everything. I try and use themed decor for my houses, but they end up eclectic nearly every time. I do think I use more modern looking items than anything else though. And I always decorate my favorite Sim's bedroom and bathroom with cultural sets. I think the designers went the extra mile with those. The India set is especially sparkly.

I used the search box in Downloads, but I didn't get results other than the free Diesel shirts--is it possible to download the items from Katy Perry Sweet Treats and Diesel or do I need to just buy them like I do my expansions?
Thank you for the insight, by the way. I'm thinking that I'll download everything for the convenience of having all theme types (no matter how gaudy some are).
Do the compilation sets leave any of the sets "out" or have they included all sets available so far (minus the newest set additions, of course)?
I'm not sure whether the members who have been here longer find it more convenient to look for the compilation links or individual set links in your Downloads thread ???

I don't believe all the store content is bundled into official compilations, but you could always look. The store site is awful but there aren't that many compilations.
A few items from EP's/SP's have been converted to base game compatibility for downloaders, but not enough to be worth mentioning and not from the packs you listed, as far as I've seen. Just buy them or arr them.
As for the original question, I have everything, mostly so I can download lots without having to check each individual item to make sure I have it. Some creators also cop to using store stuff but don't say precisely what is used. I got tired of cow sofas and that barrel planter of purple flowers.

If it's in the store, you'll find it here. If you're talking about the actual stuff packs, you'll need to go to the TPB store to find those.
The compilations will tell you what sets are included. You can download those and then check out what hasn't been included yet and download those from the last page(s) of the thread. I remember that some things indeed didn't make it into the compilations but maybe they were added once spotted. Some of the Renault cars weren't included, there's a Late Night sign and building missing (named just 3), some T-Mobile promo items also slipped through and the children's charity week thing also got excluded by mistake.
All of these were re-uploaded eventually so you'll have to figure it out for yourself. There are collections files for decrapped and arred store content out there. Personally I prefer to make my own collections, that way I know exactly what's in my game and whether I'm truly up to date.
