Not all sims. Certain meshes. But I hate windowed mode-- because I can't scroll to move the camera.

This seems very likely. Come to think of it, every time I install a GunMod camera or derivative thereof, I think this problem rears its head again. And... there it is! "boolProp UseShaders true" Alright, thanks so much TashaFaun! Awesome that you were able to diagnose that! :)
